Pasta has been given a bad reputation recently because it is a carbohydrate – but we want to help debunk this myth! Pasta (especially when cooked al dente) is a very healthy, low GI food. In Italian cuisine, pasta made with durham is a great source of fiber and has a higher protein content than many other wheats. Durum is a wholly different species from bread wheat in that it contains a third fewer chromosomes. Durum is an older species and a hybrid of wild grasses; modern bread wheat is more domesticated. Durham semolina pasta can be a great part of a healthy diet because it is digested slowly, providing a slower release of sugar into the blood, and giving a greater feeling of satiation.
